Isn't it amazing that one of the most popular foods in the Bible is ultra popular today? Corn is easily grown, easily harvested and easily stored. Dried, canned, frozen, fresh - made into rich dishes, from corn chowder to corn pudding. When eaten with beans and lentils, corn forms a complete protein, taking the place of meat in the diet. The following recipe was created in the Sky At Dawn kitchen and is mighty tasty...
The Low Fat Recipe for Bottlerocket Corn Pudding: 2 ten ounce packages of frozen corn, completely thawed,1 1/2 cartons of egg substitute, 3 1/2 cups of skimmed milk, 1/2 cup of refrigerated butter spray, 4-5 Tablespoons of white flour, no calorie cooking spray, 1/2 - 1 cup of Splenda - depending on personal level of sweetness. Mix egg substitute, flour and Splenda together. Add butter spray and milk and mix until fully incorporated. Carefully add corn and mix again, very slightly. Pour into a large baking dish and place into a 350 degree pre-heated oven. Bake for about 40-45 minutes - until pudding center is solid and pudding top is golden brown.
