Grab your fishing pole and head
to the lake! Trout is naturally low in calories and makes
a great choice for most anyone watching their waistline.
Naturally low in fat, a good source for Vitamin B-12, body-building
protein, iron, potassium, Vitamin B-6, niacin and rich in omega-3's - yes indeed,
trout makes a healthy choice! And a
three-ounce serving contains about 130 calories.
The following recipe will up the calorie
and fat content, but it's still very low cal. If you don't like trout, any variety
of fish may be used. We suggest adding a side
salad, a small baked tator, a small chunk of whole grain
bread and a glass of sugar-free tea.
Our Low
Fat, Low Calorie Recipe for Pecan Crusted
Trout (or the fresh fish of choice)
Makes about 8 servings at 275 calories per
serving.
1 1/2 pounds of fresh trout fillets
1 cup of crushed pecans
1/2 carton of Egg Substitute
1/2 cup of skimmed milk
1 cup of sifted flour
1/2 teaspoon of garlic powder
1/4 teaspoon of cayenne pepper
1/4 teaspoon of dried thyme (optional)
1/4 teaspoon of dried marjoram (optional)
1/4 teaspoon of dried rosemary
1/2 cup of peanut oil
1/2 - 1 cup of refrigerated no calorie butter spray
salt & pepper
Beat together the milk and eggs. Inside a
separate bowl, mix garlic powder, cayenne, thyme, marjoram, rosemary, flour,
salt & pepper. You may use either black or white pepper.
Next, coat fish with milk mixture,
dredge with flour that has been seasoned. Dip into the milk mixture one
more time and coat with the nuts.
Set aside
on waxed paper, allowing a few minutes for the fish
and nuts to set and dry.
Heat the oil and butter spray and when hot,
saute the fillets until golden brown - turning only once.
