Diet Shepherd's Pie
  
The traditional Shepherd's pie is generally
filled with beef and topped with mashed potatoes. Both
of these ingredients can be Diet Friendly, but usually aren't.
To make the Shepherd's Pie Diet Friendly, the leanest
of hamburger should be used.
Potatoes are a healthy food until butter
and cheese gets in the mix. So rather than arrange a pie using
a meat/potato combo, try the Diet Friendly recipe instead which
blends together a vegetable combo. The mashed potatoes
are still there - just minus all those hidden calories. Our
recipe for Diet Shepherd's Pie is low in calories, low in fat,
and it tastes yum.
THE RECIPE FOR DIET SHEPHERD'S PIE
Ingredients:
4 cups of mashed potatoes, plain with
only salt and pepper added to your personal taste. Instant
potatoes can also be used.
1 large can of Chunky Beef Soup
1 cup of LIGHT sour cream
Directions: Blend sour cream into mashed potatoes.
Spread 1/2 the potatoes into an 8-inch pie pan that has
been sprayed with non stick cooking spray. Place into
a 375 degree preheated oven until potatoes are golden. Remove.
Carefully pour in the can of soup.
Top with remaining potatoes by piping them on top, and
return to oven. Cook until potatoes are golden brown on
top. You can purchase a piping bag at your local shopping
center, generally for about $3.00.
Tip: Prepare your Diet Shepherd's
Pie in tiny tart pans which are perfect for single-servings.
Calories: Yields 8 servings at
about 200 calories per serving.
